I used Trader Joe’s Toscano cheese with black pepper and it was creamy and balanced with the perfect amount of pepper.

Bucatini Cacio E Pepe Pasta Recipe

recipe traditionally does not have any meat or seafood inside it, cacio e pepe is not vegetarian.
The reason being Pecorino Romano is manufactured using animal rennet.
To make this recipe vegetarian, you will have to work with a different hard cheese.
There are also different views on which pasta is most effective in this recipe.
The primary issue is that we’re attempting to make a creamy sauce out of an extremely hard, dry, aged cheese.
I made this and the cheese clumped on me too.

  • I use 1/2 lb of pasta, 2
  • Stir occasionally during cooking and, five minutes into the cooking time, scoop out 250ml water into a wide bowl to allow it to cool slightly.
  • This cacio e pepe recipe may be the perfect weeknight dinner to throw together, especially if you’re in a pinch for time and ingredients.
  • Add the bucatini and cook until just al dente, 8 to 9 minutes.
  • I used Trader Joe’s Toscano cheese with black pepper and it was creamy and balanced with the perfect quantity of pepper.

The one issue we see people running into when making this dish may be the cheese clumping up when tossing it alongside the pasta.
The addition of warm pasta water may be the answer!
The starchy water really helps to develop a creamy, saucy consistency that perfectly coats the pasta.
Add the drained pasta, 1 cup of the reserved pasta water, the grated Parmesan and Pecorino Romano.
Toss to coat the pasta well and season with salt. [newline]Add the rest of the ¼ cup of reserved pasta water and tablespoon of butter, tossing to incorporate.
Step 6 Add the grated Pecorino and start to stir the pasta, cheese, pepper and pasta cooking water over a low heat.

As a sheep’s milk cheese, it was mostly homemade and once dried, pecorino includes a long life.
Pasta, of course, added bulk to the meal and was easy and inexpensive to prepare.
It means “cheese and pepper,” referencing the Pecorino cheese and black pepper used to make the sauce.

I’ve also had in the US an excellent version that has been made out of Grana Padana and butter.
And twice in Rome in Trastevere at “Le Mani in Pasta” delicious versions they explained made out of Provolone Picante.
In fact, any recipe you note that adds any ingredient apart from the 3 mentioned here is not original, and probably created by someone who’s never been to Rome.
